Chicken and Spinach Linguine

This chiken and spinach linguine tossed in a creamy sauce with melting mozzarella, so simple, so delicious.



Marinate chicken :

1 1/2 pounds chicken breast

3 tablespoons olive oil

1 tablespoon spicy chicken seasoning or italian mix

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

For the pasta :

1 pound uncooked linguine

A drizzle of olive oil

1/2 onion, diced

3 cloves garlic, diced

1 1/2 cups baby spinach, washed and drained

3 tablespoons butter

4 tablespoons flour

1 teaspoon salt or to taste

1/2 teaspoon black pepper

1/2 teaspoon nutmeg powder

1 cup full cream milk

2 cups cream

1 cup chicken stock

2 cups grated mozzarella cheese (optional)


  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. Toss the chicken with three tablespoons of oil, the Italian spices, garlic powder and black pepper.
  3. Then put olive oil in a frying pan over medium-high heat and fry the chicken for 2-3 minutes on both sides, until golden on the outside but still tender on the inside.
  4. Remove chicken, chop and set aside.
  5. In the same pan, add the onion and sauté until translucent, then add the garlic and sauté for 1 minute.
  6. Add the spinach and, once wilted, push to one side of the pan.
  7. In the other side of the pan, add the butter and let it melt, then add the flour and stir until a roux forms. Add the seasonings, then the milk, stirring continuously.
  8. Add the cream and stir until thickened, then add the chicken stock and stir for 3-4 minutes.
  9. Add pasta, chicken and 1 cup of cheese, then stir.
  10. Optional: top with remaining mozzarella and bake at 450°F until cheese is bubbly and golden. Bonne appétit !
