Chicken Burritos with French Fries

  • Author: Jo & Bart

  • Yield: 2 1x

A burrito with everything we love: chunks of chicken, crispy fries and a fresh tomato salad!

2-4 tortillas

2 ounces cheddar

sauce (of your choice)

For the chicken:

1 1/2 pounds chicken breast, cubed

2 tablespoons heavy cream

1 teaspoon parsley

1 teaspoon Italian spice blend

salt and pepper to taste

For the salad:

2 medium tomatoes, diced

1/2 onion, thinly sliced

1 handful parsley, finely chopped

Drizzle with olive oil

Salt and pepper to taste

For the fries:

2 large potatoes, cut into equal strips

frying oil (optional)

  1. In a bowl, toss the tomatoes, onion and parsley with a drizzle of olive oil. Season to taste and chill.
  2. In another bowl, mix the chicken with the heavy cream, parsley and Italian spices, stirring until the chicken is evenly coated. Season with salt and pepper.
  3. Cook chicken in a skillet over medium-high heat, stirring occasionally, until cooked through. You can use a knife to check for doneness after 10 minutes. The flesh should be white in color; if it's still pink, let it cook for a few minutes.
  4. Meanwhile, move on to cooking the fries in frying oil or in the oven, as you prefer. To cook in frying oil, bake the fries at 150°C until they begin to rise to the surface (5-8 minutes). Take them out and drain, then raise the oil to 190° before plunging the fries back in to brown (2-3 minutes). For oven baking, see notes below.
  5. Arrange the burrito with the cheddar cheese, chicken, salad, fries and sauce of your choice. Bon appétit!

  • For the French fries, take care to cut strips of the same proportion. This way, they'll cook evenly.
  • If you want a lower-fat meal, you can bake your fries in the oven. To do this, mix the potato strips in a bowl with salt and a drizzle of olive oil. Bake at 200°C for 30 minutes, or until golden brown and crisp.
