8 oz - 225g pasta, we chose spaghetti
2 oz - 60g butter
1 onion, finely chopped
2 garlic cloves, finely chopped
1 cup - 240 ml heavy cream
4 oz - 120g Parmesan cheese
¼ tsp - 1.5g salt
¼ tsp - 0.5g pepper
- Cook the Pasta: Begin by cooking 8 ounces of pasta in salted boiling water until it reaches the perfect al dente texture. Remember to reserve some of the pasta cooking water before draining the pasta. Set the cooked pasta aside.
- Sauté Onions and Garlic: In a skillet over medium heat, melt 2 ounces of butter. Add finely chopped garlic and onion, and sauté for about 3 minutes until the onion becomes soft and translucent.
- Introduce the Cream: Pour in 1 cup of heavy cream and gently heat it over low to medium-low heat, taking care not to bring it to a boil.
- Incorporate Parmesan Cheese: Gradually add 4 ounces of finely grated Parmesan cheese while stirring constantly. This prevents clumping. Season the sauce with ¼ teaspoon of salt and ¼ teaspoon of pepper. Continue to stir until the sauce turns smooth and silky.
