Easy Roasted Oven Potatoes

Deliciously crispy on the outside and tender and fluffy on the inside, this recipe for easy oven roasted potatoes is a safe bet!



For the potatoes what you need is:

1 lb. potatoes

1/3 cup olive oil

1 teaspoon nutmeg

1 teaspoon paprika

1 teaspoon curry

1 teaspoon basil

1 tablespoon sambal oelek - Optional but highly recommanded

1 ounce parmesan cheese

Salt and pepper ta taste

For the dipp what you need is:

2 ounces capers

1 cup mayonaise

1 tablespoon mustard

1 ounce parsley

juice of 1/2 lemon


  1. Preheat the oven to 400°F.
  2. First, cut the potatoes into medium-size slices.
  3. Toss the potatoes in the baking tray with the olive oil, paprika, mutmeg, curry, and basil. Season with salt and pepper.
  4. Bake at 400°F until potatoes are golden brown and look crisp on the outside, about 35-45 minutes, tossing once at the halfway point.
  5. When it start to crisp up, remove from the oven, add the Parmesan cheese and place in the oven for a further 3 minutes.
  6. Garnish with parsley and serve warm.


You can either use parchment paper, or place the potatoes directly on the baking tray, but in this case, don't forget to lightly grease it.

To make it vegan, just skip the parmesan cheese.
