Gnocchi With Chicken And Italian Herbs

A simple one pan dinner with perfectly cooked gnocchi coated in a rich cream sauce combined with sun-dried tomatoes, garlic, spinach, parmesan and fresh basil.

  • 1 pound uncooked gnocchi
  • 2/3 pound lean chicken breast
  • 4 ounces sun-dried tomatoes in oil
  • 2 ounces spinach
  • 2/3 cup heavy cream
  • 2/3 cup chicken broth
  • 1 tsp minced garlic
  • 1 tsp dried italien herbs
  • salt & pepper to taste


  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions until they float to the surface. Drain the cooked gnocchi and set aside.
  2. In a large pan, heat a drizzle of oil over medium heat. Add the chicken breast pieces and cook until they are no longer pink in the center, stirring occasionally. This should take about 5-7 minutes. Once cooked, remove the chicken from the pan and set aside.
  3. In the same pan, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the chopped sun-dried tomatoes to the pan and stir them with the garlic.
  5. Sprinkle the dried Italian herbs over the tomatoes and garlic, and stir well to distribute the flavors.
  6. Pour in the heavy cream and chicken broth, and stir to combine all the ingredients. Bring the mixture to a simmer and let it cook for about 2-3 minutes to allow the flavors to meld together.
  7. Add the cooked gnocchi and cooked chicken back into the pan, stirring gently to coat them with the creamy sauce. Cook for an additional 2-3 minutes to heat everything through.
  8. Stir in the spinach leaves and cook for another minute or until the spinach has wilted.
  9. Taste the sauce and season with salt and pepper according to your preference. Adjust the seasoning as needed.
  10. Remove the pan from the heat and let it sit for a few minutes to allow the flavors to come together.
  11. Serve the creamy chicken and gnocchi in bowls, ensuring to spoon plenty of the sauce over the dish.


  • Gnocchi Variations: You can use either fresh or packaged gnocchi for this recipe. If you prefer a lighter texture, opt for fresh gnocchi. If using packaged gnocchi, make sure to follow the cooking instructions on the package to ensure they are cooked properly.
