One Pan Broccoli Pasta With Cheddar

Can't get your kids to eat vegetables? Be strategic and try this recipe for broccoli and cheddar pasta. We bet they'll finish their plate in no time, and who knows? Maybe they'll even ask for more?


Units Scale
  • 2 tbsp olive or avocado oil
  • 1 yellow onion (finely chopped)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth
  • 1 cup cream
  • 8 ounces pasta (we used rigatoni)
  • 1/2 broccoli
  • 1 tsp dried thyme
  • 1 tsp mustard
  • salt & pepper to taste
  • 1 ounce cheddar cheese
  • 1 ounce parmesan (optional)


  1. Heat oil in a large skillet over medium heat. Sauté the onion until softened, approximately 3-4 minutes. Add garlic and cook for an additional minute until fragrant.
  2. Pour in the chicken broth and cream, then bring the mixture to a boil. Add the pasta, ensuring it is fully submerged in the liquid, and let it return to a low boil. Cook the pasta covered, following the package instructions. To prevent sticking, occasionally run a wooden spoon or spatula along the bottom of the pan.
  3. During the last 5 minutes of pasta cooking, add the broccoli and seasonings. Cover the skillet and continue cooking until everything reaches your desired level of doneness.
  4. Remove the skillet from heat. Stir in the cheddar cheese until it is fully melted, coating the pasta and broccoli.
  5. Taste the dish and adjust any seasonings as needed. Serve hot and you can garnish with parmesan, chili flakes and protein of your choice. Enjoy!
