Discover the perfect harmony between al dente pasta, a creamy sauce and generous sautéed mushrooms.


Units Scale
  • 1/2 lb - 225g pasta of your choice
  • 8-9 button mushrooms
  • 1 onion
  • 2 handfuls - 200g spinach, or more (1) (2)
  • 3/4 tsp - 12g salt
  • 1 tsp - 6g paprika
  • 1 tsp - 6g ground black pepper
  • 3-4 tbsp - 45 ml olive oil
  • 2 cups - 450g grated Mozzarella cheese
  • 3/4 cup - 180 ml whipping cream
  • 3/4 cup - 180 ml milk
  • 1/3 cup - 80 ml pasta cooking water


1. Cook the Pasta: Boil your chosen pasta in salted water until it reaches an "al dente" texture. Before draining the pasta, reserve about 1/3 cup of the pasta cooking water. Drain the pasta and set it aside.

2. Sauté Onions and Mushrooms: Heat olive oil in a large skillet over medium heat. Add the chopped onion and sliced mushrooms. Sauté until the onions become translucent, and the mushrooms turn lightly browned and tender.

3. Add Spinach: Stir in the chopped spinach and continue cooking for about 5-8 minutes, allowing it to wilt and soften.

4. Season: Season the mixture with salt, paprika, and black pepper. Adjust the seasonings according to your taste. Create the Creamy Sauce: Pour in the whipping cream and milk, and stir well to combine. Let the mixture simmer for a few minutes until the sauce thickens slightly.

5. Incorporate Cheese: Gradually add the grated Mozzarella cheese to the sauce. Stir until the cheese is completely melted and the sauce becomes smooth.

6. Combine Pasta and Sauce: Add the cooked pasta to the creamy mushroom and spinach sauce. If needed, use the reserved pasta cooking water to adjust the sauce's consistency. Stir to ensure the pasta is well coated with the sauce.

7. Simmer: Allow the pasta to simmer in the sauce for a few more minutes. This will help the pasta absorb the flavors and thicken the sauce.

8. Serve: Dish out your creamy mushroom pasta while it's still hot. Optionally, sprinkle additional cheese on top if desired.


(1) Mmmh more spinach: If you decide to use more than a handful of spinach, pay attention to the texture of the sauce, as spinach releases water during cooking. The solution is to let it simmer a little longer or use less milk than planned.

(2) Spinach cooking: Make sure you don't overcook the spinach: To preserve its taste, it's best not to overcook it. Add it to the pan towards the end of cooking the mushrooms and onions, and simmer for just 5 to 8 minutes until it wilts slightly.

Al dente pasta: Be sure to pull the pasta from the boiling water when it is still slightly undercooked because it’ll finish cooking in the mushroom sauce. 

Add a hint of garlic for extra flavor: If you like garlic, you can add a finely chopped clove of garlic when you sauté the onions. The garlic will bring an extra aromatic flavor to the recipe and will go perfectly with the mushrooms and spinach. Just make sure you don't burn it, as this could give the preparation a bitter taste.
