Sometimes you're in a hurry, but still want to treat yourself. This delicious recipe for spinach pesto pasta is just what you need in this situation. With its beautiful green color, this recipe will delight your taste buds.



1/2 pound pasta of your choice

1/4 cup pasta cooking water

1/3 cup almonds

3 cups spinach

2 ounces grated parmesan cheese

2 cloves garlic

1/2 cup olive oil

1/2 lemon juice

1 tsp salt

1 tsp pepper


  1. Place the pasta of your choice in a pot of salted boiling water. Follow package instructions for cooking time. Keep some pasta cooking water, drain and set aside.
  2. Wash and spin-dry the spinach leaves.
  3. Blend the leaves in a food processor with the almonds, garlic, parmesan cheese, lemon juice, olive oil, salt and pepper.
  4. Mix the pesto with the pasta and add a little cooking water until the sauce has the texture you like. It's ready, serve hot and bon appétit!
