Units Scale
  • 8 ounces pasta of your choice
  • 1 onion (chopped)
  • 1 tablespoon tomato paste
  • 1/2 cup cream
  • 1 1/2 cup chopped tomatoes
  • 1/4 cup pasta water
  • 1 teaspoon salt
  • 1 teaspoon Provencal herbs
  • 1/2 teaspoon black pepper
  • 3 ounces mozzarella

  1. Cook pasta in boiling salted water according to package instructions. Reserve some of the pasta cooking water, then drain and set aside.
  2. Sauté onions briefly (2 minutes) over medium-high heat, then add tomato paste and chopped tomatoes. Cook briefly (1 minute).
  3. Add pasta water, cream and spices and cook for 5 minutes, stirring occasionally. Taste and season to taste.
  4. Return to a low heat, add the cooked pasta and cheese and stir until the cheese is incorporated.

  • For a spicier version, you can add a pinch of chili-flakes when cooking the onion to add a little spice to the recipe.
  • For an extra touch of freshness, you can add a few leaves of fresh spinach or arugula to the sauce just before incorporating the pasta.
  • If you prefer a thicker sauce, you can cook the sauce for a few minutes longer to reduce it further.
