The Easiest Creamy Mushroom And Tomato Pasta

Here's a recipe that's perfect for fall, but can also be made year-round to suit your mood. This creamy mushroom and tomato pasta is easy and quick to prepare.



8 oz - 225g pasta, we used linguine

A drizzle of olive oil

1 oz - 25g butter

1 onion, chopped

7 oz - 200g mushrooms, sliced

2 tbsp - 28g tomato paste

1 tsp - 1g dried oregano

1 tsp - 1.5g garlic powder

1 tsp - 5g salt

1 tsp - 2.5g ground black pepper

1 cup - 240 ml heavy cream

1/4 cup - 60 ml pasta water

1 cup - 225g Mozzarella cheese

Fresh basil leaves, for garnish


1. Cook the Linguine: Boil the linguine in salted water according to the package instructions. Drain the cooked pasta and set it aside.

2. Sauté the Onion: Heat a drizzle of olive oil and butter over medium heat in a large skillet. Add the chopped onion and cook until it turns translucent.

3. Cook the Mushrooms: Add the sliced mushrooms to the skillet and continue cooking until they become tender.

4. Add Flavorings and Cream: Stir in the tomato paste, dried oregano, garlic powder, salt, pepper, and heavy cream. Mix well until the sauce is homogeneous.

5. Combine with Linguine: Add the cooked linguine to the skillet and 1/4 cup of pasta water. Toss the pasta in the creamy mushroom sauce until it's well-coated.

6. Melt Mozzarella Cheese: Add mozzarella cheese to the skillet and stir gently. Do this off the heat to avoid clumping.

7. Serve and Garnish: Serve the dish while it's hot. Optionally, top with more grated mozzarella if desired. Garnish with fresh basil leaves.
