Zucchini Pasta

It's summer and summer means zucchini, of course. Here's a recipe for zucchini pasta that's both healthy and full of flavor. A real treat!



2 medium zucchinis

3 garlic cloves

1 lemon

1/2 cup cream

1/2 tsp salt

1/2 tsp pepper

a dozen basil leaves

2 ounces parmesan cheese (grated)

300g pasta of your choice (spaghetti and linguine work well)


  1. Cook pasta in salted boiling water until al dente. Reserve a little cooking water, drain and set aside.
  2. Meanwhile, grate zucchini.
  3. Chop and sauté the 3 garlic cloves.
  4. Add the zucchini and sauté for 7-10 minutes.
  5. Stir in the lemon zest, cream, salt and pepper.
  6. Add the cooked pasta to the zucchini, adding a little pasta cooking water if necessary, 2/3 of the parmesan and the fresh basil.
  7. Cook for a further 3 minutes.
  8. Serve with remaining parmesan on top. It's ready, serve hot and bon appétit !


Fresh and varied herbs: Try adding other fresh and varied herbs such as parsley, mint or chives in addition to basil to give variety and freshness to your dish.
